Superbowl party

Sunday was my first ever superbowl party! We had our friends Kelsey and Brandon over and Bea and Ivan.



 I tried out a bunch of recipes from the most recent issue of taste of home magazine.  The chocolate dream whoopie pies were my favorite. 


The frosting on the inside was like whipped chocolate butter and the outside cookie was soft and chewy.  It was basically like a big soft and creamy chocolate oreo.

Ingredients

1 package (18-1/4 ounces) chocolate cake mix
3 eggs
1/2 cup canola oil
1 teaspoon vanilla extract

FILLING:
2/3 cup sugar
2 tablespoons all-purpose flour
1/8 teaspoon salt
1 cup 2% milk
1/2 cup milk chocolate chips
2/3 cup shortening
1/3 cup butter, softened
3/4 teaspoon vanilla extract

GARNISH:
1 cup miniature semisweet chocolate chips

Directions
In a large bowl, combine the cake mix, eggs, oil and vanilla; beat on low speed for 30 seconds. Beat on medium for 2 minutes.

Drop by 2 tablespoonfuls 2 in. apart onto greased baking sheets. Bake at 350° for 15-18 minutes or until edges are set. Cool for 2 minutes before removing to wire racks to cool completely.

For filling, in a small saucepan, combine the sugar, flour and salt. Gradually add milk. Bring to a boil; cook and stir for 1-2 minutes or until thickened. Stir in chocolate chips until melted. Cool completely.

In a large bowl, beat the shortening and butter until fluffy. Beat in chocolate mixture and vanilla.
Spread chocolate filling on the bottoms of half of the cookies, about 2 tablespoons on each; top with remaining cookies. Roll sides in miniature chocolate chips for garnish. Store in the refrigerator. Yield: about 1 dozen.

 I also made foccacia bread that turned out excellent. 
 
 
 
Ingredients

1 package (1/4 ounce) active dry yeast
1 cup warm water (110° to 115°)
2 tablespoons olive oil, divided
1-1/2 teaspoons salt
1 teaspoon sugar
1 teaspoon garlic powder
1 teaspoon each dried oregano, thyme and rosemary, crushed
1/2 teaspoon dried basil
Dash pepper
2 to 2-1/2 cups all-purpose flour
2 plum tomatoes, thinly sliced
1/4 cup shredded part-skim mozzarella cheese
1 tablespoon grated Parmesan cheese

Directions
In a large bowl, dissolve yeast in warm water. Add 1 tablespoon oil, salt, sugar, garlic powder, herbs, pepper and 1-1/2 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky).


Turn onto a floured surface; knead until smooth and elastic, about 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour.


Punch dough down. Cover and let rest for 10 minutes. Shape into a 13-in. x 9-in. rectangle; place on a greased baking sheet. Cover and let rise until doubled, about 30 minutes. With fingertips, make several dimples over top of dough.


Brush dough with remaining oil; arrange tomatoes over the top. Sprinkle with cheeses. Bake at 400° for 20-25 minutes or until golden brown. Remove to a wire rack. Yield: 1 loaf (12 pieces).


 Thomas made a rasberry fruit dip. 
 
1 8oz bar reduced fat cream cheese (room temperature)
1/4 cup marshmallow fluff
3 tbsp sugar free seedless raspberry preserves
 
Combine all ingredients.  Blend thoroughly. Serve with fresh fruit.
 
And for drinks we had strawberry party punch.
I'm not going to post the recipe cause it wasn't that great.  But little Alex liked it.  That boy loves his "agua" he calls all drinks agua.

We also had velveeta cheese dip and chips, lil smokies, chex mex, and M&M's.  YUMMMM!!!!
To have enough room for everybody we brought out the futon from the extra bedroom so everybody would have a seat.

I love hanging with friends.  Thomas and I were going for the Packers and everybody else was for the Steelers (suckers :)


Saturday night I met Thomas in Idaho Falls after he got off work to play games at my old MTC companions apartment.  It was so nice to see her again, I haven't seen her in 3 1/2 years! And I got to meet her husband.  We played a fun game called Boxers or Briefs that is kind of like Apples to Apples. 
Such a fun weekend, it went by so fast!

Improvement

Yesterday we escaped to Alta, Wyoming for a full day of snowboarding at Targhee school resort.  We started out on the smaller hill and I got warmed up going toeside and heelside.  For lunch we used our little propane stove to heat up some soup.  My dad gave the stove to Thomas for his birthday and it is perfect for taking snowboarding so we don't have to spend a ton of money on lodge food. 

After lunch we tried out some bigger hills.  Thomas suggested we try out one of the hills that has a bunch of cat tracks.  We tried this one before when we went with our friends Karlee and Will and I had a really hard time.  I wouldn't get enough speed to go up the hill and then I'd end up having to unstrap and walk or crawl up it.  This time was awesome and I was able to make it all the way without falling.  It was nice to be able to compare the two times and really see improvement.  Here is a picture of my hotty husband http://www.powderdayphotography.com/p642476387/h135cd44e#h135cd44e

We saw the craziest thing. There was a couple with there 18 month old little girl who was on skis!!! That night we had our friends Kelsey and Brandon over to play Guitar Hero and card games.

Three day weekend

I have a lesson plan overload! I think about the lessons I'm working on all day and then when I go to bed at night I dream about them.  Thank goodness for a long weekend to try and get everything done before classes start again.
This Saturday we spent another day snowboarding at Kelly Canyon. More improvement on my toeside heelside skills.  Actually right as we were leaving we were going down a little decline and I started to be able to switch from one side to the other without making a huge turn beforehand.  We saw the cutest little guy who had to have been 3-4 years old and about 3 1/2 feet tall just cruisin down the hill on his snowboard.  He was so little that even if he would have crashed he wouldn't have had very far to fall.  Adorable.

Saturday night we watched nephew Alex while his parents went an a date and got to catch up on Grey's Anatomy on Netflix.  Last year we rented some of the seasons and got to about season 6 but stopped there, so now we are watching the current season plus catching up. 
One of my friends I met in class last semester, Kelsey and her husband Brandon came over for dinner and games Sunday evening.  We had yummy cajun chicken pasta, salad, and asiago sourdough bread (courtesy of Great Harvest, we got a card for a free loaf in our goody bags from the 5K we ran on New Years Eve). We all played some Guitar Hero (Kelsey was on medium level! The rest of us were all on easy) and we played monopoly deal and phase 10.  Kelsey and her husband are really fun to hang out with and we are excited to spend more time with them.  Thomas slipped up a bit on Friday and offered to take somebody's shift Sunday night.  Then he realized that we had made plans to have friends over and tried to switch back but it was too late.  Luckily he was able to go in a little later so that he could hang with us some. He has assured me that before switching any shifts he will check with me first now :)

New Running Mantra

I totally have a new running mantra.  I was reading the free kindle edition of the book "Run Like a Mother"  and one of the authors talks about how when she was training for marathons afterwards she would always be kind of dissappointed because she felt like she had a little bit left in her tank.  Finally she ran a race where she left everything out on the course and her tank was on empty by the end.  What helped he to give it her all was by telling herself to "go towards the light"  the light being the pain.  Or in other words she was telling herself to not be afraid of the pain but to embrace it.  I know a lot of times when I am running hard I allow myself to slow down because I am afraid of the pain.  While running the New Years Eve 5K we had about 400 meters left and Thomas started to pick the pace up a bit.  He told me to pick it up too but I told him to go ahead.  Then I realized that I did not want to finish this race alone and I reminded myself to "go towards the light" so I embraced the pain, picked the pace up, and we finished together.

 Last night we had a fun game night with our friends Karlee and Will. We have been really lucky to find good couple friends who we share similar interests with since we have been married.  We played Settlers of Catan, Monopoly Deal (card game), and Yahtzee (card game version). I love card games because they are quick and usually don't require too much thinking and strategy.  We are super excited for Karlee and Will because they are expecting their first baby in July :)  Karlee just finished her student teaching this past semester and graduated.  She is an inspiration to me.  A super cute, fun, smart, athletic girl.  We trained for the Mesa Falls Half Marathon together and she is speedy.  She has continued to workout through her first trimester and I hope to follow her healthy example when I'm pregnant (someday).

Boise Women's 5K

School is crazy! I have been managing my time wisely though.  6am I wakeup and excercise (Just got Bob Harper's new workout DVD's AMAZING!! I'm so sore.) And class from about 7:45am-12:30.  I watch Alex my nephew till about 4:30 everyday after class.  He's getting so big.  He walks everywhere now, it's his preferred method of transportation.  He still cries everyday when his mom or dad drops him off.  That makes me a little sad, I swear I'm nice to him.  Thomas had a shift change schedule so now he gets off work at 2pm (has to be there at 5am though) that really helps cause he can play with Alex while I do homework.  Thomas has pitched in so much around the house.  He makes dinner pretty much every night and does the dishes and cleans up. While I sit on my bum on the couch reading textbooks and typing lesson plans/papers.  So that is my excuse for not blogging.  I'm writing papers and on the computer for like 8 hours everyday doing homework and just don't have the energy to do more. 
Thomas and I had such a great weekend in Boise.  We went there for two reasons: #1 so that I could run a 5K with my good friend/old roommate Tess #2 So that Thomas could meet with the head of the MRI department at Boise State. 
I knew it was going to be an awesome weekend when as soon as we pulled up to Boise State campus Thomas got a call from the hospital saying that they wanted to offer him a job as an ER tech! Finally!
The Dept. head was super nice and sat down with us for an hour looking through Thomas' transcripts and explaining things to us.  We thought for sure he would need to do a year of pre reqs to be able to qualify for the MRI program.  But the dept. head gave us hope that he can do some pre reqs online and maybe get in for this next fall.
After our meeting we headed to the Women's Expo.  There were a ton of vendors.  There were food booths, health booths, gym booths, just everything imaginable. We came back with a couple bags of coupons and freebies.  We stopped at the Subway booth and saw Jared from the Subway commercials.  Nice guy. He seemed kind of bored of greeting people and smiling.

After the expo we got sandwhiches and headed to a nearby park called Camel's Back park to eat them.  Boise has such wonderful parks! This one had a huge sand hill that you can hike to the top and then a bunch of dirt trails that wind around for miles.  Perfect for running.

Saturday morning a couple of Tess' friends came and met us at her house and us girls drove together to downtown Boise where the race started.  I was so surprised that there were no lines for the porta potties!? That is unheard of in running race world.  The race had a buch of different waves.  First were the wheelchair participants, then the elite, and then our red wave which is the competitive wave.  Before the gun went off they have music blasting and even teach you a dance.  They sung the national anthem and we couldn't hear a word, also as the lady is singing a big helicopter flew over so that didn't help.  When the gun went off we were ready to go.  It took only about ten seconds to cross over the start mat and as soon as we crossed over the mat there was no hold up or dodging really.  At first I was just going to run easy and wasn't going for time but I knew once I started I needed to just push myself.  I started focusing on people ahead of me and telling myself to stick with them and then pass them.  There was an 11 year old girl whose headband fell off.  I wanted to pick it up for her but she looked back at it and shrugged and kept moving.  Then there was a lady pushing a stroller booking it.  I stuck with her and then passed her on the hill.  The first mile was flat, second mile uphill, and third mile downhill.  I loved it.  At the top of the hill they have these old men playing bagpipes to greet you.  At the top of the hill is an old train depot, really beautiful building.  And we started in front of the state capitol building.  This race had me the closest to throwing up then I have ever gotten while running.  I think what started it was at the top of the hill there was a strong smell of food.  Talking about food or smelling food while running just sends me over the edge.  So gross.  So my goal was to for sure get under 9 minute miles and throughout the race I was running a little over an 8 minute mile.  The last quarter mile or so is a straightaway and it kind of fools you because you are running on the left and there are people going towards the finish line on the right plus there is a balloon arc halfway through the straightaway but it's not the finish line is the start of "tuxedo row"  where men in tux tops and short shorts high five you.  Once I got to tuxedo row I just sprinted and made it through.  Official time 24:16 (and the Garmin showed that it was exactly 3.1 miles).

All four of us girls ended up being split apart but I think we all really enjoyed the run.  We met in the park that we finished in and got our goodies.  I loved that they hand you a sack with all the food afterwards instead of having to stand in a million different lines to get what you want.  Post race food included an apple, cheese stick, chocolate milk, yogurt and berries cup, cookie, and ice cream bars.  There were more vendor booths in the park to look at too.  Ryan (Tess' hubby) and Thomas met us at the park after the race.  They had gone to Boise State football stadium where ESPN was hosting College Game Day while we were running.

 We laughed cause they were going around town with Graham (Ryan and Tess' 11 month old son) in his stroller and it was probably funny for people to see two men and a baby walking around.  We couldn't have asked for better weather for the weekend.
Saturday night Tess and I went to a dinner and then the broadcast of the genereal relief society with her mother in law.  I love that President Monson talked about not judging other people by their outward appearances.  This past week I had to do some simulation activities for my special education class that I'm taking.  One of them was to be in a wheelchair for four hours.  People were super nice and helpful but I could also tell that they talked down to me a bit, like I was a child and mentally handicapped. When I mentioned to one girl that I was married she acted totally surprised, like a person in a wheelchair can't get married.  I was amazed at how people get around in a wheelchair.  I have a lot of my classes at a building at the top of the hill.  Going down a hill in a wheelchair is scary! You try to break but it hurts your hands.  I ended up rolling into a patch of grass and couldn't get out so had to ask for some help.  This nice girl took me all the way down the hill to my class.  I entered the building on the second floor, somebody showed me where the elevator was and got in only to realize it doens't go to the bottom floor! What!? So I had to go out the building again and go all the way around looking for an entrance to the basement floor.  It was a tiny little side entrance.  I was late for class.  Then I had to go back up the hill.  There was no way I was going to make it on my own.  My arms hurt just from wheeling around on flat ground.  Luckily this super nice guy offered to take me up the hill even though he wasn't going in that direction.  Poor guy, he was sweating like crazy by the time he got me up there. 
The next day I had to where four different eye masks that simulated different visual impairments like being cross eyed, tunnel vision, and only seeing form one eye.  People were so rude about them.  Actually only guys were rude and made comments.  Do people really think I'd just walk around wearing an eye mask because I think it's cool? But serisouly, what if I had just had eye surgery and had to wear these masks, why would you make fun of somebody?  By the end of the day I was fed up with it.  So when I walked past a guy and his girlfriend (who I always see making out in the hall next to my class)  and he laughed when I passed and said "did you see that!?"  I turned around and was like "Do you want to know WHY I'm wearing a mask?" He was shocked and didn't respond but his girlfriend said yes.  I found that I would much rather just have someone ask "what happened?" then to have them stare and talk behind my back.  Anyways I think this was a wonderful activity and definetly made me feel more compassion for those who live their whole life with these disabilities. 
Back to Boise, Saturday night we watched the Boise State football game and then Sunday morning went to part of church with Tess and Ryan.  We had so much fun hanging out with them and can't wait to move to Boise and be able to hang with them even more. 
On our way home Sunday evening we stopped in Pocatello where I spent most of my childhood and had dinner with the Larsen's my childhood friends family.  Her mom is such a wonderful cook! We counted all of the different food dishes she made and it came out to like eight or nine! I haven't been in their home for like 12 years so it was great to be back and catch up. 
We love our little getaway weekends and are so grateful for our amazing friends.

Mesa Falls Hike

Today started out with a 7 mile run with my friend Karlee and we had a new partner this week, Brittany.  At church last Sunday, Brittany heard me talking to another friend about running and said she was looking for a running buddy so invited her along for our Saturday long run. 
Our run was about 3.5 miles all uphill.  More hilly than last week and even faster than last week and a mile more too :) I haven't been running during the week, just doing workout videos but I still feel just fine on these weekend long runs.  I don't want to lose my mileage.  This next weekend is the Boise Women's 5K!
This afternoon we took off to Mesa Falls to go see the falls and go on a little two mile hike with Karlee and her hubby Will.  We were just there at Mesa Falls for our half marathon a month ago and already the leaves have changed color and it looks life fall.  It's beauitful.  We couldn't have asked for better weather either.

I love having friends who enjoy doing the same things we do.  I love the warm/cool fall weather.  I love weekends with no homework (I worked hard this week to get it all done before Saturday).

Mesa Falls Half Marathon Race Update

I loved this race and completly enjoyed myself and feel great about the results and my performance. I'll start from packet pick-up last night. 
We had Karlee my new running buddy and her hubby Will over for a pasta dinner around 5:30pm.  I'm so glad that we are making new couple friends.  Running is such a great way of connecting people.  Then we all headed to the small town of Ashton, Idaho about 40 minutes away to pick up our packets.  It was at an elemntary school and you just go in the doors and there in the hallway were the boxes with the race packets in alphabetical order.  It's such a small race you just pick out your own packet and... that's about it.  But guess what the packet bags were?! Potato sacks! It cracked us up.

 The shirts are pretty "unique"  they are collared with a fish on them. I told Thomas he could have it and wear it to work but he declined.  Although he did try it on.

 Our race swag included some runner's lube, blister pads, nutri grain bar, quench your thirst chewing gum, and a $500 dollar gift card to some sunglass company.  The $500 gift card is totally a scam.  What the company does is distribute these gift cards and then charge you ten percent of the $500 for shipping and handling and then send you a cheap pair of sunglasses from China.  I googled it cause it sounded too good to be true.
 After picking up our gear we drove the car around the course.  This was my first and only marathon so it brought back some great memories.  I didn't remember it being so hilly! But it was even prettier than I remembered.
We then headed back to our house for some banana cream pie Karlee had brought.  Got to bed around 10pm and the alarm went off at 6am.
I at some toast (butter on a whole wheat sandwhich thin) at around 6:30am and then later had three Clif Shot Bloks at 7:30am.  Used the bathroom seven times.  We got to the elementary school around 7:20am and waited to load the buses which took the runners to the start at about 7:45am.  The race started at 8:30am.  It was pretty chilly in the morning so originally I was going to wear a dri-fit jacket but a minute or two before the race started I decided to take it off.  Good choice.  The first four miles or so was on a dirt bike path.  Loved that! Plus it was a slight downhill and we were running along a river.  At mile four our hubbies were there taking pictures.

Mile four to six was a big ol' hill that went on forever! I felt strong going up it but lost Karlee at mile 5.25. Luckily our hubbies were there to bike alongside us.  I stopped to eat 3 shot bloks and drink some water at mile 6. 
We had some good flats and downhills for a mile or so and then pretty much the rest of the race was rolling hills.  I had trained a lot on rolling hills and so I actually really enjoyed them.  The downhills sometimes give me a sideache so I'm actually relieved to start going uphill for a little bit.

 I felt really strong through the rolling hills and Thomas was pointing out people for me to catch. Finally, there was a mile left and I was dead. Usually when it gets this close I can kick it up a gear and finish a bit faster but at this point I was just putting one foot in front of the other and that was enough. Thomas kept telling me I was hunched and needed to straighten up. I just told him to "Go!" I justed needed to focus and get er done at the point, hunched back and all.

We did it and had fun doing so.
I loved having Karlee to run a big chunk of the race with and Thomas to bike alongside me.  He kept telling me I was doing awesome and he really encouraged me.  My official time was 2:03:13, not a PR but I am happy about that time. And it's the toughest course I've done and my second best time.  It was a tough hilly course and I felt strong mentally and physically and had fun.  That was my biggest goal for this race was to enjoy myself.

 After the race we stopped to get a free huckleberry milkshake for the hubbies and then headed home. I took a nice warm sea salt bath and then we headed to Dairy Queen.  I can't eat for a few hours after a race but when the hunger comes, it comes with a vengeance! Once we replenished our carbs we were ready for an hour and a half night, to get us ready for a fun night of bowling.
We went with my sister Bea and her hubby Ivan, and our friends Natalie and her hubby Jacob.  These two little cuties came too:
